The realization of culinary passion. That’s the story behind Calgary’s Vero Bistro Moderne, located in Calgary’s always-vibrant Kensington neighbourhood. Owner and chef Jenny Chan launched the restaurant in 2008, serving what she terms “modern interpretations of Italian and French cuisine," sometimes inspired by her Chinese heritage.
Vero Bistro means “true bistro” in Italian. “She named it that because she wants to stay true to her passion, which is cooking,” explains Vero Bistro manager, Michael Berg. Born in Hong Kong, Jenny came to Canada as a teenager. She graduated from the SAIT Polytechnic culinary program earning her Red Seal accreditation. “She loves Italian cuisine,” explains Michael, adding that, prior to opening her own restaurant in what was once a T-shirt shop, Jenny worked for five years in the kitchen at La Dolce Vita Ristorante where she honed her Italian cooking skills.
Vero is a small room, and the tables are placed quite closely together, but the tight squeeze gives the room a friendly and energized vibe. And the food – inspired by French and Italian cuisine – is high-end, expertly prepared and made all the more intimate if you visit for “no-menu Tuesday” when the meal is chef’s choice.
Consistently a top-rated destination locally and at the national level, Jenny Chan’s Euro-contemporary Kensington restaurant continues to make a name for itself.
