Equal parts gelateria, espresso bar and neighbourhood café, Hotel Gelato was five years in the making before co-owners Dan Hoffman and Christopher Borowski opened shop in 2010. No strangers to the restaurant and food service industries, the two were able to draw on more than 50 years of combined experience working in hospitality and luxury hotels.
Even so, going the independent route initially proved to be a challenging, though rewarding, experience. “You kind of have a vision of what to expect; the reality tends to be far different, especially when you’re starting a business from scratch, that’s not franchise-based,” explains Dan.
