Noodles are a comforting street food beloved by many across the world, especially right here in the Lower Mainland where rainy days offer the perfect excuse to indulge in a steaming bowl of broth to warm you from the inside out. For one of Vancouver’s leading chefs, Angus An, noodles are “the ultimate comfort food.” Born in Taiwan, Angus spent a lot of time in Thailand with his grandparents and developed a passion for Asian cuisine. “Growing up, I was lucky enough to enjoy a lot of dumplings and handmade noodles,” he says fondly of his favourite childhood dishes.
In August 2015, Angus opened his very own modern noodle bar, Fat Mao Noodles, on East Georgia Street. The restaurant was not his first foray on the Vancouver culinary scene; Angus is also the owner of award-winning upscale Thai eatery Maenam in Kitsilano, as well as New Westminster’s Longtail Kitchen and Freebird Chicken Shack. One of the reasons the extremely busy chef decided to open yet another eatery was clear-cut: “I saw a shortage of really good fast-food noodle eateries in Vancouver," he notes. “I wanted to bring to Vancouverites a traditional noodle bar offering noodle bowls from Northern and Southern Thailand and China; ones which were as authentic as possible."

Celebrated Vancouver chef Angus An has put together a menu of five terrific noodle bowls and a selection of sides; the house-made XO sauce is a great addition to any meal while An Mama’s scallion pancakes are a must-try if you can get ’em before they sell out. Open from 11:30 am until 9:00 pm (or until the noodles run out), Fat Mao is ideal for a midday date or an early-evening rendezvous.
